hey so.. have u guys heard of ube....
so i was in chinatown with my friend yesterday and was on the lookout for ube because i randomly got it in my head that i wanted to make ube crinkles after being seduced by the ube baking tiktoks and youtube shorts ive been seeing for a little over a year now.
also this guy

so we found some ube at hong kong supermarket and i was pretty hyped until my friend was like. so how are you gonna bake with it. and then it hit me that most recipes operate under the assumption that it's impossible for you to get fresh ube in your area so you have to buy some powder from trader joe's or something. jokes on you i live in nyc B)
so i decided to make it into halaya that i'd then use for the cookies.
except:
1. the halaya recipe called for evaporated milk and condensed milk, two things i did not have, and i do all my baking late at night so i wasnt in the mood to go out again, so i had to make both from scratch for the first time.
2. i only bought 0.6 of a lb of ube and the recipe called for 2.2 lbs, so i had to reduce the quantity of ingredients by a pretty gnarly margin.
it's funny because this is the part i was the most convinced would go wrong, and honestly!! it still became jam!! i wish i took a photo, but out of everything, it probably came out the best. nice sweet naturally bright purple jam ^_^
so then i moved onto making the cookies themselves.

can you. can you spot the difference.
TO BE FAIR that recipe specifically used purple food coloring which i didnt wanna use because ube is naturally purple anyways. the flour dilutes it tho :< another thing, my cookies never properly crinkled :((( in hindsight i shouldve kept them in the oven for longer but i just wanted it to be over with because i was already so self conscious about how they were turning out.
so they dont offer much in the looks department, how about the taste??

theyre basically the cookie version of a blueberry muffin. my brother says i should call them blueberry muffin tops when giving them to people. now you may be wondering, how can they taste like blueberries when theyre made specifically with purple yams? not even god himself knows.
honestly, im sort of back and forth on them. my dad and brother love them, i think they're fine. they're better chilled and they're so light and fluffy that you can almost trick yourself into thinking they're healthy, but they dont really do it for me the way the photos do.

like!!! look at these!!!! i was expecting some crazy unique taste, not blueberry muffin cookies :(( im sure it has something to do with my halaya, i will definitely buy more ube next time and make a more ube-y halaya. maybe ill try a different cookie recipe too. would purple food coloring make them more magical as well? perhaps..
